I grouped these two together because they're basically the same category, Topography being locations on land, while Sea, well on the Sea. I remember hosting a Topography Knowledge completion similar to the GM ran events whenever there's a new area. So with a similar pattern, I invited some friends to complete the Sea section with me.
These 2 are the 2 that are easiest to complete on H, because other than the small parts where you have to gain Amity with an NPC to give you the knowledge of the location, most can be completed just by being in the vicinity. But as with anything repetitive, the challenge here will be against boredom. Below is how I completed most parts of Topography and Sea on H.
Complete with Friends
Let me just say that this is a suggestion. Some players just prefer to do everything by themselves, I do too most of the time. But with the amount of land and ocean you need to cover to complete these 2 sections, it will help to do it with like minded people. Schedule a weekend or 2, if anything it helps if 1 of you has at least an Epheria Sailboat to complete the Sea sections. But more than that, the main goal is to complete the journey, and nothing is difficult, or in this case boring, when done with friends. Take some screens along the way if you may, you'd be surprise at some of the sights in Black Desert Online.
Complete by Area
I've mentioned this as a tip on completing another section on H, but this has never made more sense than when completing these 2 sections. I think there is no argument in completing all of Drieghan first, working your way to O'dyllita, Kamasylvia, Calpheon, then Balenos, Serendia, Media and finally Valencia before going to Sea. The order is up to you, but at least complete the whole territory before going to the next one.
Have Google Handy
Even if these 2 sections are the easiest to complete, you'd be surprise that you'd still get stuck with a small grey area on your map that you just cannot "complete" no matter how many times you've dashed back and forth. Provided that this is not a restricted area, some small sections can only be obtained through Amity or Dialogue with an NPC. I personally remember trying to obtain the Cantusa Desert knowledge. Turns out I had to interact with the Node Manager Maia, which is north of Crescent Shrine, Cantusa Desert being on the farthest, lower right hand corner of the map!
Sound and Notif On When AFK Running
Since completing these 2 sections will require a lot of semi-afk travelling, it will help to have your sounds and notif on. You can wear a headset if you're staying in front of your computer or on speaker if you aren't. The main purpose is to have an idea of where your character might be or if you're under attack or have reached your destination. Make sure you do not minimize the game. When you're still running, you'd hear your horse's hooves, this will stop either you got attacked, which you will hear the change in back ground music or the sound effects of battle, or the sudden silence with the ambient sounds could mean you've reached your destination.
Give Completion Time and Patience
This will be a standard for completing these 2 sections, the other sections and probably almost anything in Black Desert Online. Set a schedule to do 1 area and do not stop (unless you really have to), until you have completed that section. If it took you the whole day to finish 1 area and don't have the energy to continue another area the next day, then do something else. You can always go back to that next area the next time you have more time, or have nothing else to do.

I got the same as Christmas gift from Pearl Abyss. Do you mean send an entry for the upcoming Heidel Ball? I'm still thinking about it.
